A dinner by chef Nelson Singh dedicated to traditional methods of food preservation, Game Meats and Cider, featuring special cider pairings and beer pairings from guest Caledon Hills Brewery.

Dry salt and Cellar Course: Braised Venison Osso Buco and Black Current Demi Glace
Smoked Butter and Caramelized Cauliflower Gratin • Crispy Shallots & Mizuna • Preserved Lemon Vinaigrette

Smoke and Seal Course: Smoked Duck Breast and Boar Bacon
Cider Compressed Apple and Orange Marmalade • Roasted Fennel • Salted Pistachios • Scotch Bonnet

Canning Course: Preserved Apple and Cardamom Tart
Butterscotch crème anglaise • Nut Praline


$65 per person, optional cider pairings $25 per person.
